In this episode of Vivala Eats you'll see how easy it is to transform a sweet potato into a pocket of goodness (a.k.a. an arepa). The stuffing possibilities are endless, but the queso frito and avocado combo in this recipe is so good you won't need to look any further. It's a match made in heaven.

Sweet Potato Arepas With Avocado and Queso Frito

1 large sweet potato, peeled and diced

1/3 cup cornmeal

1/3 cup water

Dash of salt

Canola oil

2 thick slices of queso de freir

1/2 avocado, sliced

Directions:

Preheat an oven to 450℉. Boil sweet potatoes until soft and mash them in a bowl. In a separate bowl, mix the cornmeal, water, and salt, then incorporate the sweet potato mash (if the mixture is too wet, add more cornmeal). Next, shape the mixture into two arepas by hand and cook on medium heat in a lightly greased pan for 3 to 5 minutes on each side, or until golden brown. Finish the arepas by toasting them in the oven for five minutes, or until crispy. Next, pan fry the cheese slices on high heat until golden brown on each side. Finally, create a pocket in your arepa by cutting it 3/4 of the way in and stuff the opening with your avocado and fried cheese.
