Sweet Plantain Casserole

2 large ripe plantains, sliced

Vegetable Oil

1 can condensed milk (14 oz)

2 eggs, beaten

1 1/2 cups queso blanco fresco, grated

Directions:

Preheat the oven to 375℉. Cut the ripe plantains into to half-inch slices and fry them in vegetable oil until golden brown. Remove the plantains from the oil and let them rest on paper towels while you prepare your casserole assembly line with the condensed milk, eggs, and queso blanco fresco. Next, in a baking dish, place an even layer of plantains, then drizzle half of your condensed milk, followed by half of your beaten eggs, half of your shredded cheese, and repeat. Bake in the oven for 25 minutes, or until golden brown.
